Ingredients
Minced Venison
  • 500 g Seriously Good Venison mince
  • Good grind of Gusto Venison Salt (Or in a pestle & mortar, grind Sea Salt & Black peppercorns infused in balsamic
  • 25 ml GUSTO Raspberry Balsamic
  • 250 ml good beef stock
  • Cold pressed rapeseed oil for frying
  • 1 medium white onion finely chopped
  • 1 large clove garlic minced
  • 1 tbsp tomato puree
  • 100 ml red wine
Mashed Vegetable Topping
  • 4 Large Potatoes peeled and quartered
  • 1 medium Celariac peeled and cut into chunks
  • 4 medium Parsnips peeled and cut into chunks
  • 1 glug Gusto Herb Oil

Mashed Vegetable Topping
  1. Heat Oven to 180c
  2. Prepare potatoes and put onto boil, ready to mash
  3. Prepare parsnips and celeriac and either add to the potatoes, or steam, to keep maximum flavour
  4. When vegetables are tender, drain and allow to dry for a short while
  5. When ready, place all vegetables in large bowl and either mash until smooth, or roughly break up with a fork, if you prefer some texture.
  6. Add a glug of GUSTO Herb Oil and some sea salt, and combine throughout the topping.
Minced Venison
  1. Heat rapeseed oil in frying pan, then gently brown venison mince, set aside.
  2. Fry chopped onion in same pan, at medium gentle heat, until soft then add minced garlic
  3. Add several good grinds of Gusto Venison Salt, then add browned venison and mix thoroughly
  4. Add tomato puree and Gusto Raspberry Balsamic and cook for a couple of minutes then add wine and bring to boil. Simmer, until liquid reduced to desired consistency.
  5. Make 1 large pie, or 4 individual pies,
  6. Top with mashed vegetables and use a fork to roughen the surface
  7. sprinkle a little Gusto Ghost Lava over the top Serve with seasonal veg and enjoy with a glass of claret.
